Home Baked Stories is a pilot series showing the stories behind home cooked meals. Episode three features Kerry Batty making Sorry for Kate (recipe below). Our first nine episodes focus on cooks from the new homemade meal cooperative, MealKu. How to make Sorry for Kate (Pasta Casserole) Ingredients: 2 cups uncooked pasta 2 14.5 oz cans of diced tomatoes 2 small (8oz?) cans of tomato sauce 1 whole block of cheddar cheese, grated. Preheat oven to 350 Cook pasta according to package instructions & drain. Combine pasta, diced tomatoes, sauce & shredded cheese in a big bowl. Mix. Pour pasta mixture into a 2.5 or 3 quart casserole dish. Bake in the oven for 30 minutes.
Just a short video on what I’ve been doing with some of the stuff I’ve been growing this summer. Here are two of my favorite types of salsas. For the first one, I used fresh tomatillos from my garden to make a tangy green tomatillo salsa. The second half of the video shows my simple method for tomato salsa that I make at least once a week. I can easy chop up a batch in about 5 minutes. I used my heirloom tomatoes for this batch: what a different home-grown tomatoes makes. Wow; so tasty. The music is from friendlymusic.com. It’s a song called “Salsa”. I like it because it sounds like Mexican Bollywood!
