The secret of this recipe is to let the batter sit in the fridge for 1 hour before frying up the crepes, and you’ll find the crepes are much less fragile and do not tear. Crêpes are perfect for breakfast served with fresh fruit or cream, and can also be made savory with fillings such as seafood, roasted vegetables, or other proteins.
